Cranberry Nut Muffins
12 regular or 24 minis
2 1/2 C flour
3/4 C sugar
4 tsp baking powder
1 C milk
1/4 C coconut oil, melted
1 C coarsely chopped cranberries
1/2 C chopped walnuts
1 Tb orange peel, grated
Oven to 400.
In large bowl, combine first group.
In separate bowl, combine second group. Add to flour mixture and stir just until moist.
Fold in cranberries, walnuts, and orange peel.
Fill greased muffin pan about 2/3 full.
Bake 20-25 minutes, cool for 5.
Yummy with whipped cream cheese!
