Easy Spanish Rice
6 Tb butter
2 onions, chopped
2 jalapeno peppers, chopped
2 14.5oz cans Rotel
1 C uncooked white rice
1/2 C sour cream
1/2 C shredded cheese
Melt butter and saute onions and peppers until soft.
Add Rotel, rice, salt, and pepper. Bring to a boil.
Reduce heat, cover and simmer 40-5 minutes.
Garnish with sour cream and cheese to serve.
