Yogurt and Spinach Dip

Yogurt and Spinach Dip

4 C fresh spinach

2 onions, sliced thin
2 cloves garlic, peeled/crushed
2 Tb evoo

1 1/2 C drained yogurt
1/2 tsp salt
1/4 tsp pepper
1/4 tsp saffron dissolved in 1 Tb hot water

Wilt spinach.

Brown onions, garlic in evoo about 20 minutes.

Stir in spinach and fry 2 minutes.  Remove from heat and let cool.

Mix yogurt & spinach and season with salt/pepper.

Refrigerate several hours before serving.
