Piernik - Gingerbread Cake

Piernik - Gingerbread Cake


2 sticks butter
1 C sugar
5 egg yolks (save the whites for another part of the cake!)

Mix in a separate bowl:

3 C flour
1 tsp baking soda
1 tsp baking powder
2 Tb ground coffee
2 Tb cocoa
2 Tb honey
3 Tb plum butter
2 Tb vegetable oil
1 Tb cloves
1 C milk

 Mix 2nd mixture into 1st mixture.


1/4 C raisins
1/4 C prunes
1/4 C figs
5 egg whites

Pour into 2 greased bread pans and bake at 350 for 60 minutes.

Optional: cut in half and spread with more plum butter or chocolate.
