Herbed Goat Cheese

Herbed Goat Cheese
from Cooking Light

1/3 C chopped fresh basil
1 tsp grated lemon rind
2 Tb fresh lemon juice
1 Tb evoo
2 tsp chopped fresh oregano
salt/pepper
2 garlic cloves, minced

1 3oz pkg goat cheese

1 9oz baguette, cut into 16 slices and toasted

Combine first group, stirring well.

Coat goat cheese in mixture, pressing to adhere.  Cover and refrigerate at least 2 hours.
