Chef DuBois' Sugar Cookies

Chef DuBois' Sugar Cookies

Beat 8-10 minutes:

1/2 C sugar
1/2 C butter, soft

Add:

2 eggs
1 tsp vanilla

Sift together and add:

2 1/2 C flour
1 tsp salt
2 tsp baking powder

Wrap dough in plastic and chill for at least 2 hours or overnight.

Oven to 350.

Roll out on a floured surface to 1/4" thick and cut out.  Place on parchment lined or greased sheet.  Bake for 10-12 minutes.  Do not over bake, and let cool completely before decorating.

Icing

2 egg whites
4-6 C powdered sugar
1/2 tsp vanilla
1/4 tsp lemon juice
food coloring as desired

Put egg whites in mixing bowl and turn on low.  Sift in powdered sugar (may need a little more or less).

Add lemon juice and vanilla.

Divide icing and color as desired.
