Q's Tortillas . . . oh my!
3 C flour
2 tsp baking powder
1 1/2 tsp salt
3/4 C home rendered lard
3/4 C hot water
Load a Kitchen Aide loaded with a dough hook. Pour in first three ingredients and mix just to sift a little bit. Drop in the lard and get it mixing on setting 3 or 4. Scrape the sides down frequently. Drizzle in the water a little at a time, continuing to scrape the sides.
Once the ingredients are fully incorporated, cover the bowl with a towel and let rest for an hour.
Divide dough in 12 pieces and roll into balls.
Line the tortilla press with wax paper, press out the balls and cook in a cast iron skillet until brown on each side.
Slather with a little butter and enter heaven on earth.
