Wild Rice Salad

1 1/2 C wild rice, soaked 3-5 days
1/2 C finely chopped red bell pepper
1/4 C corn
1 carrot, shredded
2 stalks celery, finely chopped
1/4 red onion, finely chopped
2 Tb parsley, finely chopped
1 tomato, diced
4 Tb evoo
2 Tb lemon juice
salt

Combine all, mix well.
