1 English cucumber, diced or cut into matchsticks
1 1/2 tsp coarse salt
1 1/4 C Greek yogurt
1 large garlic clove, minced
2 Tb white-wine vinegar
2 Tb evoo
1/4 C fresh dill
freshly ground pepper

In a colander, sprinkle cucumber with salt, toss to combine.  Let stand at room temperature for 30 minutes.  In a medium bowl, combine all ingredients and season with salt and pepper to taste.
