Tomato Pie

4 large tomatoes, peeled and chopped
10 large, fresh basil leaves, chopped
1/4 C finely chopped green onions
1/2 C grated sharp cheddar cheese
1/2 C grated mozzarella cheese
1/2 C mayo
1/2 C sour cream
salt and pepper

pie crust, pre baked

Lightly sprinkle tomatoes with salt and set in colander to drain for at least 15 minutes.  (I set them to drain, make and bake the pie crust, assemble the other ingredients, and that works quite well.)

Combine grated cheeses, mayo, and sour cream.

Mix tomatoes, basil, and onions and spread in the bottom of the pre-baked pie crust.  Spread cheese mixture on top.  Bake for 30 minutes or until lightly brown and bubbly.

Let set 15-20 minutes before serving.  Also good at room temperature.  Good served with salad.
