Quinoa Tabouli

4 C sprouted quinoa (about 2 C before sprouting)
4 green onions, sliced
1 lg tomato, seeded and finely diced
3/4 cucumber, peeled, seeded, and finely diced
1/4 C parsley, minced
5 Tb evoo
4 Tb lemon or lime juice
salt to taste

Mix everything and allow to sit before enjoying.

(Sprouting quinoa, soak for 4-8 hours.  Drain and rinse.  Sprout in a jar another 18 hours or more, rinsing every 8 hours.  Should be firm, not too crunchy, when ready.)
