Peach Jam

4 C chopped fresh peaches
1/4 C lemon juice
1 pkg powdered fruit pectin
5 C sugar (substituting Agave works well too)

Combine peaches, lemon juice, and pectin in a large, stainless steel pan.  Bring to a boil over high, stirring constantly.

When fruit is boiling, add sugar and stir.

Get the mixture back to boiling and boil for 1 minute.

Pour into hot jars, leaving 1/4" head space.  Seal with lids/bands and allow to stand (on the counter, out of drafts) to seal.  Jars that don't seal can be reheated or water-bathed.
