Hot Buttered Cider

7 C apple juice
1/2 C brown sugar
1 tsp whole cloves
1 tsp whole allspice
1 stick whole cinnamon
lemon zest from one lemon
1 1/2 C dark rum
butter

Stir apple juice and brown sugar together in a large saucepan.  In a piece of cheesecloth, bundle up the cloves, allspice, cinnamon, and zest.  Drop the bag into the liquid.  Simmer another 15 minutes.  Remove from heat, remove the spices.  Stir in the rum and pour into mugs.  Add a dab of butter and serve immediately.  Serves around 10.
