Halibut Souvlaki

From Cooking Light

1 Tb fresh lemon juice
1 tsp dried oregano
2 tsp evoo


4 6-oz halibut fillets

1/3 C Greek yogurt
1/4 finely chopped fresh dill
1/4 tsp minced fresh garlic
4 pita
2 C chopped romaine lettuce
1/2 C thinly sliced red onion
8 plum tomato slices

Preheat broiler.

Combine first 5 ingredients in a shallow dish.  Add fish, turning to coat.  Let stand 15 minutes.  Put fish on the rack of an oiled broiler pan.  Broil 8 minutes or until flaky.

Combine salt, yogurt, cucumber, dill, and garlic in a bowl, stirring well.  Spread some yogurt mixture in the center of each pita, top with 1 fillet, lettuce, onion and tomato slices.  Roll up and eat.  OR, cut pita in half, open halves, and stuff.

Serves 4
