1 pint cherry or grape tomatoes
4 oz feta cheese
1/2 C red onion, finely chopped
1/2 C evoo
1/4 C apple cider vinegar or red wine vinegar
1 Tb dried oregano
salt and pepper
Remove tops and scoop out pulp (use handle of a spoon). Turn upside down on a paper towel and let drain. Mix cheese and onion and spoon into tomato cups. Combine remaining ingredients and spoon marinade over tomatoes. Cover and chill at least 30 minutes before serving.
