1 kilo (about 7 cups - measure it by kilos, it's worth it)
2 tsp baking powder
1 Tb salt
1/4 kilo shortening or lard (about 1 1/3 C)
2 C hot water
Mix first 4 ingredients in a bowl, kneading with hands. Add in a little water at a time until you have a smooth dough. Knead for about 90 seconds until elastic. Divide into 40 balls, then return them to the bowl to rest for 20 minutes.
Heat griddle. Roll out tortillas as thin and round as possible - yes, this takes practice! Place onto hot griddle and flip to the other side for 45 seconds, then flip and cook the other side 20 seconds. Continue with the rest.
