Fabulous French Toast

This recipe is from a Rachael Ray cook book.

3 eggs
1/2 C milk
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla extract

oil
1/2 loaf French bread cut in thick slices
1-2 Tb butter
3 Tb brown sugar
1 C walnuts

1/2 C ricotta cheese

1/2 C sliced strawberries
1/2 C diced cantaloupe
1/2 C halved red grapes

Preheat a griddle or large nonstick skillet.  Preheat the oven to 200.

In a shallow dish, beat first 5 ingredients together.  Make french toast as usual, keeping slices warm in the oven.

In a small skillet, cook the butter, brown sugar and walnuts until butter is melted and walnuts are fragrant.  Stir into the ricotta cheese.  Serve a little over french toast, and top with mixed fruit.  (I dice mine and make fruit salsa.)
