English Muffins


Yield 8-10 muffins

1 C milk
3 Tb butter
1 egg
1/2 tsp salt
2 tsp sugar
3 C flour
1 1/2 tsp dry yeast

Load ingredients into machine in order listed and run a dough cycle.  Once done . . .

Sprinkle area with cornmeal, pat dough into a 1/2" thick rectangle.  Cut out rounds, or simply cut squares.  Place on baking sheet and let rise about 20-30 minutes.

Heat a dry, cast-iron skillet (a regular griddle works well too) over a low flame, oil a little.  Cook the muffins about 5-7 minutes on each side.  Split and serve warm.  They freeze well!
