Crustless Spinach Quiche

a drizzle of EVOO
1 onion, chopped
a LOT of fresh spinach
6 eggs, beaten
1.5 C shredded cheese (whatever you have)
salt/pepper

Preheat oven to 350 and lightly grease a 9" pie pan.

Saute onions in the oil.  Once soft toss in spinach - enough to fill the pan to over flowing - and cook until spinach is wilted.

Meanwhile . . . In a large bowl, combine eggs, cheese, salt and pepper.  Add the spinach/onions and stir to mix.  Pour into prepared pie pan.

Bake until eggs set about 30 minutes or so.  Let cool 10 minutes before serving.
