Cream of Broccoli Soup Without Cream

1 1/2 lbs broccoli florets
1 lg onion, chopped
2 lg potatoes, peeled and sliced
4 C vegetable broth
1 bunch chives, minced
1 tsp lemon zest

salt/pepper

In a pot bring first group of ingredients to a boil over med-high heat.

Cover, reduce to med-low, and simmer until potatoes are tender, about 20 minutes.

Puree with an immersion blender.

Return to pot, season, serve.
