Couscous Salad

4 portions.

1/4 C diced cooked chicken
1 C chicken broth
2 Tb sunflower seeds, toasted
1/4 C couscous
1/2 apple, peeled and grated
1 1/2 Tb lemon juice
1 carrot, peeled and grated
1 small zuccini, grated
1 scallion, sliced

Boil broth, add couscous, remove from heat.  Leave for 5 minutes to absorb broth.  Fluff with a fork.

Mix everything and enjoy.
