Chipotle Salmn Burgers

From Cooking Light - I think!

Mayo ~

1 Tb chopped cilantro
3 Tb mayo
2 Tb finely chopped fresh mango
1 Tb finely chopped fresh pineapple
1/8 tsp finely grated lime zest

Combine in a blender and whirl until smooth.  Put in a container, cover and chill.

Burgers ~

1/3 C chop green onion
1/4 C chopped fresh cilantro
1 Tb finely copped chipotle chile, canned in adobo
2 tsp fresh lime juice
salt
1 1 1/4 pount salmon fillet, skinned and cut into 1 inch pieces

Put onion, cilantro, chile, and juice in a food processor and whirl until finely shopped.  Add salt and salmon.  Pulse a few times until salmon is coarsely ground and mixture is well blended.

Divide salmon into 4 portions; shape each into a 1" thick patty.  Cover and chill 30 minutes.

Cook 6 minutes on each side in a little oil or until done.

Sandwiches ~

4 english muffins
lettuce

Toast the muffins (in the pan after the patties are cooked is fine) and then build the burger.
