Chilled Salmon Fillets with Lemon Dill Dressing

1 1/2 C water
1/4 C lemon juice
1 med onion, sliced
10 whole pepper corns
3 sprigs parsley
2 bay leaves

6 fresh or frozen fillets

3/4 C mayo
3 Tb buttermilk
2 Tb fresh dill or (2 tsp dried)
1 Tb fresh chives
1/2 tsp lemon peel
2 tsp lemon juice

In 12 inch skillet combine first 6 ingredients and bring to boiling.  Add salmon.  Cover and simmer 8-12 minutes (longer if frozen) until fish flakes easily.

Remove salmon and discard poaching liquid.  Cover and refrigerate for 2 hours.

For dressing combine remaining ingredients, cover and chill about an hour.
