Breakfast Cookies

2 eggs
1/2 C honey
1/4 C melted butter

1 C shredded carrots
1 C chopped walnuts
1/2 C raisins
1/2 C finely chopped dried apricots
1/2 C chopped dates

1 C flour
1 C rolled oats
3/4 tsp cinnamon
3/4 tsp nutmeg
1/2 tsp baking soda
1/4 tsp salt

1 1/2 C Cheerios or equivalent

Oven to 350.

Line 2 large cookie sheets with parchment and set aside.

In large bowl whisk together first 3 ingredients.  Add in next 5 ingredients.

In a seperate bowl, whisk together next 6 ingredients.  Stir in Cheerios.  Pour flour mixture over fruit mixture.  Stir until well mixed and no dry ingredients remain.

Place by rounded tablespoons about 1 inch apart.  Bake 15 minutes.
